In town we get to see quite a few of these guys selling Alu-Muri-Channa ......its something like the chats you get in the plains but again not like the typical chats. Here they usually use boiled potatoes with raw papaya, onions , chilli , coriander and of course the different spices along with puffed rice (muri we call here) if you want or else just the potatoes. Its very tasty. I put up this guys picture here because , he is the one from whom we usually have. He is one of those few fellows who went for training in the Nutrition Department regarding street food and hygiene....and now he makes sure he follows all those guide lines. And you bet he does..... he is spotlessly clean , uses boiled water and makes sure he has his uniform on which includes a cap and an apron. He stands under the Eucalytus tree (the same tree that i had put up sometime back) and you would have to wait in line for your turn......But then i get some preference here when i want to have......he won't make me wait......after all am his personal dentist!!!!! Lol!!!!PS: Any one visiting Shillong , do try this variety of chat if you can call that.....but ask me where to find him . LOL!!!!
