"Squash"....The most versitile veggie







This is a very common vegetable found all over Shillong. I don't know the English name for it but i beleive the botanical name is Sechium edule. For a lay man it would look like it belongs to the same family of the Gourd.Basically a creeper as seen in the pictures above. It is fleshy and has a very high content of water.It is grown abundantely all over the place here. But inspite of this if we go to the vegetable market in town they would ask not less then Rs 10/- per kilo. What i love most about this vegetable is that it is one of the most versitile vegetable . We can just about cook it any way we like starting from salads..... stews..... mixed vegetable preparations....pakoras....koftas....even some of the most mouth watering deserts can be made out of it. Its leaves and stems can also be used for cooking and tastes as good.

You know why our forefathers/ancestors were hale n healthy and lead to longer life? The reason is they were used to a healthy life style and eat healthier food, non spicy and tasty to body. I feel Squash is one of those fruit/veg, which gives lots of water/carbohydrates and energy and must be easily digestible...
